Written, Oral Communication and Practical Skills Assessments: A Test of Students' Performance in Fundamentals of Food Service Operations

Abstract

Teachers can assess how effective their instruction is by linking students' achievement to specific learning objectives. Student learning assessment is critical because it informs instructors and students about how effectively students are meeting course learning objectives. Instructors can utilize assessment to develop criteria for assessing student understanding and competency in course learning objectives. Before creating individual units and lessons, instructors and curriculum planners are encouraged to "think like an assessor." A skills evaluation evaluates a person's ability to perform a specific skill or combination of talents. Skills evaluations can be conducted in person or online and might take the form of a simulation, test, questionnaire, or observation. The objective of this study was to construct a summary of students' written, oral, and practical performance in the Food and Beverage Operations subject. In this study, the correlations of these three skills of students were also tested. The descriptive-correlational research approach was utilized to evaluate the link between student performance assessment of written, oral, and laboratory skills. According to the findings, students have learned about the theories and methods of food service operations. Students' oral communication and practical abilities, on the other hand, indicate that they are functioning well in both areas.  Students' performance in written communication is not related to their performance in oral communication, whereas oral communication is highly related to their performance in laboratory activities. The study's recommendations are strengthening students' oral communication skills through class recitations that integrate common phraseologies and conversations in foodservice operations and reinforcing laboratory activities through actual restaurant service operations.
